Easy dinners thanks to Pinterest

I like to think I am a pretty decent cook and baker.  I am not very creative in the kitchen, but can follow a recipe to a T, sometimes substituting healthier options, and things turn out pretty good - my co-workers love my cakes I must say!!!! Working and hanging out with the Babes does not leave much time to cook a gourmet meal.  The kitchen in the townhouse is smaller than my closet at House#3, so makes cooking even harder even if I did have the time.

H is a meat and potatoes kind of guy.  He loves sauces and flavors and for the most part would rather do the dinner cooking while I get the girls bathed and settled for bed - we divide and conquer over here.  Recently, I felt like we were in a dinner rut and eating the same thing every week, so I made a goal to try at least one new Pinterest recipe each week and only repeat if something is a hit.  Luckily we have had a few hits with both H and the Berger Babes - score for me - because this does not happen often.

 



Roasted Cauliflower as a side - it is like popcorn - YUM





I made this Mac and Cheese recipe for the girl this week.  I threw in some pureed cauliflower - HIT!!!  Score momma - sneaking in those veggies!

 




APRICOT CHICKEN.  
This is something my mom used to make at when we were growing up - Mimi is not a cook and if she can do it, anyone can!!!  It is EASY and delicious.  Literally, you cover chicken breast with a jar of apricot jelly and cook till chicken is done!!!!!  SO EASY and SO YUMMY!!!!


I promise, each of these recipes is easy (a few are in the Crockpot which is even better) and all are delicious and healthy for the most part!!!!

Lately . . .


So framing started July 25th, by Saturday, August 4th, framing was COMPLETE for the most part.  I think that is record time - definitely a record in our framing experiences - a little over 1 week - CRAZY!  Here are a few pics of the progress the last few days.

As exciting as the house is, I am sure everyone is just as interested in what the BergerBabes have been up to lately!!! 

The girls are at camp most of the summer at their preschool.  We are so lucky they offer 5 mornings a week, 8 weeks during the summer for both girls.  They love their school, teachers and friends, so camp is a great extension to this and everyone is happy.  Our nanny has been amazing in keeping the girls entertained in the afternoons so they are not stuck in Rental #3 all day.  This the spray ground was a big hit.  Luckily, these parks are very popular in our town, so spray ground hopping is easy and exciting.

We hit the lake Saturday with a few other families.  The older girls (4 yr olds) went tubing with one of the dads.  I think they laughed and smiled the entire time and kept giving us thumbs up for FASTER.  Then they decided they wanted to go alone and Button (my daredevil) wanted to go too.  I felt like a bad parent, letting 3 girls under 4 go in the tube alone, but they can all swim with life vests on and we did not go too fast. 


On the last "run" Berger started screaming Button's name, who was facing backwards.  We stopped the boat and reeled them in.  button was FAST asleep in the tube while jumping waves.  We brought her back on the boat and she fell immediately back asleep and slept like this . . . while we got the boat out of the water, cleaned up, packed the car - notice we are in the parking lot . . .
